Il loro cammino per diventare pane PEMA comincia con l’acqua pura del Fichtelgebirge con la quale vengono lavati e poi lasciati in ammollo per avviare la germinazione e, ancora umidi, macinati senza ridurli in farina. Cominciano subito gli impasti e l’avvio della lievitazione con pasta madre, poi una cottura lenta a bassa temperatura. Così i cereali mantengono tutte le caratteristiche nutrizionali. Perché possano però esprimere al meglio tutte le loro qualità, il pane riposa 24 ore dopo la cottura prima di essere pastorizzato e confezionato.</span><br />

<span style="font-size: large;">1- Facciamo il caffè – e questo non lo sto a spiegare -, zuccheriamolo e lasciamolo raffreddare in una tazza.</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">2- Nel frattempo, mettiamo in frigo il contenitore in cui intendiamo montare la panna e le fruste che useremo per montarla: in questo modo siamo sicuri che la panna monti meglio e più in fretta.</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">3- Quando il caffè è a temperatura ambiente versiamolo nel contenitore di cui sopra e uniamoci la panna liquida (agitare bene prima dell’uso) e montiamo con le fruste a velocità media per qualche minuto. La panna non si monterà del tutto ma dovreste ottenere una consistenza simile a una mousse un pò liquida.</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">4- Mettete il composto in freezer per un paio d’ore, ma con un accorgimento: ogni 15-20 minuti estraetelo dal freezer e mescolatelo con cura in modo da “spezzare” il ghiaccio che si sarà formato.</span><br />
